SOYA BURGERS

It was her first day in 10th Standard. It is so hard to believe that the little sister has now grown up. It was like a few years ago when I held her in my arms for the first time, and now, she has become a constant support and a best friend. She was one of the reasons I started cooking. Seeing the joy on her face after having a special dish, always made me happy.
I always loved making tiffin for her school and cooking new dishes regularly as she got bored with the regular food that she had to take. It was not always possible when my college was going on, but now that I am unofficially a graduate, I have loads of free time till my results are out. So, I have decided, that if not regularly, I would try to cook for her two or three dishes for her lunchbox.
I had some leftover burger buns after I made chicken burger last week, so I decided to make a simple burger for her lunchbox and Bonu is a huge fan of burgers. The other day, we were eating out, and she confessed that she would choose burger over pizza any day. I did not have chicken at home, so I thought of making the burger with Soya bean and oats. It is nutritious, delicious as well as heart warming. This recipe is adapted from Chef Sanjeev Kapoor's Kitchen.

SOYA BURGERS




Recipe:


Preparation Time: 30 minutes

What you need?


  • 1 cup Soya Granules 
  • Burger Buns
  • 2 cups Warm Water
  • 2 tsp Oil
  • 2 Onions, chopped
  • 2 Green Chilies, chopped
  • 4 tbsp Tomato Ketchup
  • 1 tbsp Mustard Paste
  • Salt, to taste
  • 2 Potatoes, boiled and mashed
  • 4 tbsp Saffola Masala Oats
  • 2 tsp Burger Mayonnaise ( 1 tsp Mayo + 1 tsp Tomato Ketchup)
  • 1 Tomato, sliced
  • 1 Onion, sliced thinly

How to make it?

  • Soak the soya granules in warm water for 20-30 minutes. Drain the excess water and let it dry. 
  • In a pan, heat two tsp oil and add in the chopped onions and green chilies . Saute till the onions are translucent. 
  • Add in the soya granules, tomato ketchup, mustard paste  and salt, and cook it till the mixture is a bit dry. 
  • Remove the Soya mix from heat and transfer it in a bowl. Let it cool for a while.
  • Now add the boiled and mashed potatoes in the Soya mixture and make a dough from it. 
  • Shape the dough into patties. The size of the patties depends on the size of the burger buns. 
  • After the patties are shaped, allow them to set in the refrigerator for a few minutes.
  • In the meanwhile, dry roast some Masala Oats on a skillet. 
  • Take out the Soya patties from the refrigerator and cover it with the crushed Masala Oats.
  • Heat two tsp Oil in a flat griddle plate and shallow fry the patties in it. Cook till both the sides turn golden brown in color.
  • After the patties are cooked, start assembling the burger. Roast the burger buns on a Tawa. 
  • Use the same Tawa to grill the sliced onions and tomatoes.
  • Apply the burger mayonnaise to the lower base of the burger bun. 
  • On top of it, place the soya patty, onion rings, sliced tomato and put the top half of the burger bun on it. Secure it in place with a toothpick.

P.S:

  • In case you do not have soya granules, you may replace it with soya chunks. If you are using soya chunks, you must grind them in a mixer to get the perfect crumb-like texture.
